Peanut Butter Cups

Shelby has an FBLA Banquet tomorrow night.  I volunteered to work at Helen's track meet all day tomorrow so the dessert that I need to bring to the FFA Banquet needed to be made today.  I dislike day old desserts.  They just taste better fresh.  So with that in mind I wanted to do a dessert that was actually good or even better the next day.  Out came a family favorite.  A recipe I had everything for already in the house.  A recipe that the girls love - even Helen eats these and she is not a peanut butter fan.  This recipe is one I found under the candy section of my Better Homes and Garden's Cook Book. I doubled the recipe because I like to bring a good sized portion when I attend an event.  the recipe I will share is doubled - so you could cut it in half if you want when you make these.  I usually make peanut butter balls.  I roll the filling into a ball and individually dip them, but cups sounded good so I decided to give them a try.

Soften 6 T. margarine
 
Add 1 C. Creamy Peanut Butter
(remember my plastic bag tip?)
Add 2 C. Powdered Sugar
Use a fork and mix it all together.  It will look like this:
Next divide the dough into 48 equal pieces and set out on wax paper.
Next take a full package of Chocolate Almond Bark and chop it up.
Next you need to put it in a double boiler.  I don't have a double boiler but I make one with a sauce pan and a glass bowl.  Just put some water into the pot, so it does not touch the bowl,
 and place the bowl on top of the pot.
Put the chocolate in the double boiler and melt it down
You probably only need to simmer the water.
While the chocolate is melting put some mini muffin liners
 into your mini muffin pans.
When the chocolate is ready put a small amount in the bottom of each muffin cup.
Put your Peanut Butter filling on top and press it down slightly.
Cover with chocolate.
When the pan is full it helps to jiggle it slightly to spread out the chocolate.  Once you get it all done all you have to do is let them sit to cool and the chocolate will harden.
This recipe makes 4 dozen Peanut Butter Cups.
